Fish Taco
Fish has been on sale for the last couple of weeks, so I tried a new recipe. I think it turned out delicious. And if Chad was willing to try it, and even commented that it was good and he wouldn’t mind having it again, then everyone should try it. It sounds weird, but try it anyway and take advantage of the fish sale.
Fish Tacos (I adapted 2 different recipes to make this one)
2 cups of coleslaw mix (from a bag)
2-3 tbsp. mayonnaise
1/2tsp. grated lime zest
1 1/2 tbsp. fresh lime juice (I used lemon because that it what I had)
1 tsp. sugar
2 fish fillets ( I used basa, but tilapia or even catfish will work)
1 1/2 tsp oil (I always use olive oil)
1 1/2 tsp mexican seasoning (I didn’t have this so I used 1/2 tsp. each of chili powder, garlic powder, fajita seasoning)
1 tbsp. garlic, minced
1 tbsp. oil
4 tortillas (flour, corn, whatever your preference is)
Directions:
Toss coleslaw, mayonnaise, lime zest and juice, and sugar in bowl. Leave at room temperature.
Evenly toss together 1 1/2 tsp. oil, Mexican seasoning, garlic and fish. Heat 1 tbsp. oil in large non-stick pan over high heat. Place seasoned fillets in pan. Cook 2 minutes on each side. Remove cooked fillets and place in a small bowl to break into small pieces (you can add lime juice and salt, if desired). Heat tortillas per package instructions.
Top each tortilla with 1/4 cup coleslaw, 14 cup tilapia. Fold tortilla in half and serve.
Makes 4 tacos.
Optional topping (I didn’t try this part)
2 tbsp. prepared Chipotle salsa
1/4 cup sour cream
Combine 2 ingredients and use as a topping for each fish taco.
